Basically the bottom is charcoal for a filter, the top is porous carbonate rock to catch moisture from the air, and the large metal tube serves as a way to heat things up and then at night chill down below ambient a bit faster so that water condenses out of the rock and drips through the charcoal and through piping to a water collection system.
